Our Chicken Tikka Masala begins in the tandoor. Chicken is marinated in a thick yogurt and spice mixture — turmeric, cumin, coriander, and Kashmiri chilli — then skewered and roasted at high heat until beautifully charred and juicy. These tikka pieces are then folded into our masala gravy: a slow-cooked base of tomatoes, onions, cream, and hand-ground spices.
The masala is rich but not heavy, deeply flavoured without overpowering heat. The contrast between the smoky charred chicken and the silky, aromatic sauce is what makes this dish legendary.
